Description

Main Ingredients:

  • 2 tbsp vegetable oil
  • 1 onion, peeled and diced
  • 2 cloves garlic, peeled and minced
  • 800 g (4 cups) boiled and cooled long-grain rice
  • ½ tbsp sesame oil
  • 2 eggs
  • 2 tbsp dark soy sauce
  • ¼ tsp salt
  • ¼ tsp garlic salt
  • 1 tbsp lemon juice

To Serve:

  • ½ bunch of spring onions/scallions, chopped

Instructions

  1. Heat oil: In a large skillet or wok, heat vegetable oil over medium heat.
  2. Add onion and garlic: Add diced onion and minced garlic, sauté until fragrant.
  3. Stir in rice: Add boiled rice and sesame oil, stir well to combine.
  4. Scramble eggs: Push rice to one side of the pan, crack eggs into the other side, scramble until cooked.
  5. Combine everything: Mix eggs with rice, add soy sauce, salt, garlic salt, and lemon juice, stir to combine.
  6. Serve: Garnish with chopped spring onions before serving.

Notes

  • For extra flavor, you can add diced vegetables or cooked meat to the fried rice.
  • Make sure the rice is completely cooled before frying to prevent it from becoming mushy.
