Wet Ingredients:
- 2 tablespoons melted butter, cooled to room temperature
- 1 large egg, room temperature
- 1 cup eggnog, room temperature
- 1 tablespoon sugar
- 1/4 teaspoon rum extract
- 1/2 teaspoon vanilla
- oil or cooking spray for frying
Instructions
- In a bowl, mix all the dry ingredients together.
- In another bowl, whisk the wet ingredients until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat a pan over medium heat and add oil or cooking spray.
- Pour the pancake batter onto the pan and cook until bubbles form on the surface.
- Flip and cook until golden brown.
- Serve warm with your favorite toppings.

- You can top the pancakes with whipped cream, maple syrup, or a sprinkle of cinnamon for extra flavor.
