Wet Ingredients:

  • 2 tablespoons melted butter, cooled to room temperature
  • 1 large egg, room temperature
  • 1 cup eggnog, room temperature
  • 1 tablespoon sugar
  • 1/4 teaspoon rum extract
  • 1/2 teaspoon vanilla
  • oil or cooking spray for frying

Instructions

  1. In a bowl, mix all the dry ingredients together.
  2. In another bowl, whisk the wet ingredients until combined.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a pan over medium heat and add oil or cooking spray.
  5. Pour the pancake batter onto the pan and cook until bubbles form on the surface.
  6. Flip and cook until golden brown.
  7. Serve warm with your favorite toppings.

Notes
