Description

This festive bruschetta recipe features a delicious mix of diced Roma tomatoes, fresh basil, and garlic tossed in balsamic vinegar and olive oil, served on toasted baguette slices with a sprinkle of parmesan cheese.

Ingredients

Scale

For the Tomato Bruschetta

  • 6 Roma tomatoes, 1 1/2 lbs, diced
  • 1/3 cup basil leaves, chopped
  • 5 garlic cloves, divided
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • balsamic glaze (optional)

For the Toasts

  • 1 baguette
  • 3 Tbsp extra virgin olive oil
  • 1/3 cup shredded parmesan cheese

Instructions

  1. Prepare the Tomato Bruschetta: In a bowl, combine diced tomatoes, basil, 3 minced garlic cloves, balsamic vinegar, olive oil, salt, and pepper. Mix well.
  2. Make the Toasts: Slice the baguette and brush each slice with olive oil. Toast in the oven until crispy.
  3. Assemble: Rub each toast with a garlic clove, top with tomato mixture, and sprinkle with parmesan cheese. Drizzle with balsamic glaze if desired.

Notes

  • You can customize the toppings by adding diced red onion, olives, or capers to the tomato mixture.
  • This bruschetta is best served immediately to keep the toasts crispy.
