Description

This Festive Christmas Tuscan Vegetable Chicken Stew is a hearty and flavorful dish perfect for the holiday season. Packed with a variety of vegetables, tender chicken, and aromatic Italian seasoning, this stew is sure to warm you up on a cold winter night.

Main Stew:

    • 1 tablespoon olive oil
    • 3 tablespoons butter
    • 1/2 medium onion, diced
    • 2 cloves garlic, minced
    • 2 cups carrots, chopped
    • 2 cups celery, chopped
    • 1 large zucchini, chopped
    • 1 sweet red bell pepper, chopped
    • 1/4 cup flour
    • 4 cups chicken broth

Seasonings:

    • 1 tablespoon Italian seasoning
    • 1/2 teaspoon crushed red pepper flakes, optional

Additional Ingredients:

  • 1 19 oz. can cannellini beans, drained and rinsed
  • 1 28 oz. can diced tomatoes, undrained
  • 1 cup cooked chicken breast, chopped
  • 1 cup fresh spinach leaves, chopped
  • 2 tablespoons cider vinegar
  • salt and pepper to taste
  • fresh parsley, for garnish
  • Parmesan cheese, for garnish

Instructions

  1. Sauté Aromatics: Heat olive oil and butter in a large pot. Add onion, garlic, carrots, celery, zucchini, and bell pepper. Cook until vegetables are slightly tender.
  2. Add Flour and Broth: Sprinkle flour over the vegetables and stir. Pour in chicken broth, stirring constantly until the stew thickens.
  3. Simmer: Add Italian seasoning, red pepper flakes, cannellini beans, diced tomatoes, chicken, and spinach. Simmer for about 20-30 minutes.
  4. Finish and Serve: Stir in cider vinegar and season with salt and pepper. Garnish with parsley and Parmesan cheese before serving.
