- 2 cups carrots, chopped
- 2 cups celery, chopped
- 1 large zucchini, chopped
- 1 sweet red bell pepper, chopped
- 1/4 cup flour
- 4 cups chicken broth

Additional Ingredients:
- 1 19 oz. can cannellini beans, drained and rinsed
- 1 28 oz. can diced tomatoes, undrained
- 1 cup cooked chicken breast, chopped
- 1 cup fresh spinach leaves, chopped
- 2 tablespoons cider vinegar
- salt and pepper to taste
- fresh parsley, for garnish
- Parmesan cheese, for garnish
Instructions
- Sauté Aromatics: Heat olive oil and butter in a large pot. Add onion, garlic, carrots, celery, zucchini, and bell pepper. Cook until vegetables are slightly tender.
- Add Flour and Broth: Sprinkle flour over the vegetables and stir. Pour in chicken broth, stirring constantly until the stew thickens.
- Simmer: Add Italian seasoning, red pepper flakes, cannellini beans, diced tomatoes, chicken, and spinach. Simmer for about 20-30 minutes.
- Finish and Serve: Stir in cider vinegar and season with salt and pepper. Garnish with parsley and Parmesan cheese before serving.
