- 4 Onions (peeled and sliced)
- 4 tbsp Butter
- 4 cloves Garlic (minced)
- 1/2 tsp Pepper
- 1 tsp Thyme
- 2/3 cup Low Sodium Beef Broth
- 2 tbsp Balsamic Vinegar
- 4 Chicken Breasts (boneless skinless)
- 1/2 tsp Salt
- 1 cup Mozzarella Cheese (shredded)
- 1/2 cup Parmesean Cheese (shredded)
Instructions
- Preheat the oven: Preheat the oven to 400 degrees and spray a 9×13 inch baking dish with cooking spray
- Caramelize onions: Add butter to a skillet, cook onions, garlic, pepper, and thyme until caramelized
- Add broth and vinegar: Stir in beef broth and balsamic vinegar until jam-like consistency
- Layer ingredients: Place onions in baking dish, add chicken, salt, remaining onions, and cheeses
- Bake: Bake for 30 minutes until chicken reaches 165 degrees internally
