Batter:
- 1 cup all-purpose flour

- 1½ teaspoons baking powder

- ⅓ cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter, melted
Additional:
- 1 cup fresh peaches, peeled and diced
- Vegetable oil for frying
- 1 cup powdered sugar
- 2–3 tablespoons milk or cream
- ½ teaspoon vanilla extract
Instructions
- Prepare the batter: In a bowl, mix flour, sugar, baking powder, salt, and cinnamon. Add milk, egg, vanilla, and melted butter. Stir until well combined.
- Fold in peaches: Gently fold in the diced peaches into the batter.
- Fry: Heat oil in a pan. Drop spoonfuls of batter into the hot oil and fry until golden brown on both sides.
- Make glaze: Mix powdered sugar, milk or cream, and vanilla extract to make a glaze. Drizzle over the fritters before serving.
Notes
- You can sprinkle additional cinnamon sugar on the fritters before serving for extra flavor.
