- 500g beef (e.g. stew meat or beef shank), cut into cubes
- 2 tbsp olive oil
- 2 onions, diced
- 2 bell peppers, diced
- 2 carrots, sliced
- 3 garlic cloves, finely chopped
- 1 tbsp paprika (smoked or sweet, depending on preference)
- 1 tsp cumin (optional)
- 1 tsp dried thyme
- 500 ml beef broth
- 200 ml tomato paste or strained tomatoes
- 400g gnocchi (fresh or refrigerated)
- Salt and pepper to taste
- 1–2 tbsp fresh parsley, chopped (for garnish)
- A pinch of chili flakes (optional)
Instructions
- Prepare Ingredients: Cut the beef, dice the onions and peppers, slice the carrots, and chop the garlic.
- Sear Beef: Heat olive oil in a large pot, add beef, and brown on all sides.
- Add Vegetables and Spices: Add onions, peppers, carrots, garlic, paprika, cumin, and thyme. Cook until vegetables soften.
- Simmer: Pour in beef broth and tomatoes. Simmer for about an hour.
- Add Gnocchi: Stir in gnocchi and cook until tender.
- Season and Serve: Season with salt, pepper, and chili flakes. Garnish with parsley before serving.

- You can add more vegetables like mushrooms or celery for extra flavor.
- Adjust the spice level by increasing or decreasing the amount of chili flakes.
