Description
This Greek Chicken Marinade is a perfect blend of olive oil, lemon juice, garlic, and herbs that will take your grilled chicken to the next level. It’s tangy, flavorful, and perfect for summer cookouts.
Ingredients
– 4 boneless skinless chicken breasts, pounded to even thickness – approximately 1-inch thickness (approximately 1 1/2 to 2 pounds)
– 1/2 cup olive oil
– 1/3 cup fresh squeezed lemon juice
– 1 tablespoon minced garlic
– 2 teaspoons honey
– 1 teaspoon salt
– 1 teaspoon dried parsley flakes
– 1/2 teaspoon dried oregano
– 1/2 teaspoon dried thyme
– 1/4 teaspoon black pepper
– Optional Garnish: 1 tablespoon fresh chopped parsley, small lemon wedges
Instructions
1. In a small bowl, whisk together olive oil, lemon juice, garlic, honey, salt, parsley, oregano, thyme, and black pepper.
2. Place chicken breasts in a resealable plastic bag and pour marinade over them. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
3. Preheat grill to medium-high heat and grill chicken for 6-7 minutes per side, or until cooked through.
4. Optional: Garnish with fresh parsley and squeeze lemon wedges over the grilled chicken before serving.
Notes
– For added flavor, marinate the chicken for longer periods of time, up to 24 hours.
– You can also add Greek yogurt to the marinade for a creamy texture.
