 - 1/3 cup sliced green onions

 - 1 teaspoon white sugar
 - 1/2 teaspoon freshly ground black pepper
 - 1/4 teaspoon dried oregano
 - 1 pinch cayenne pepper
 - 1/4 cup chopped fresh Italian parsley
 - 2 tablespoons chopped fresh mint
 - 2 tablespoons chopped fresh basil

- 3/4 cup all-purpose flour
 - 3/4 teaspoon baking powder
 - vegetable oil for frying
 
Instructions
- Prepare the tomato mixture: Combine tomatoes, zucchini, green onions, salt, sugar, black pepper, oregano, cayenne, parsley, mint, basil, and feta in a bowl.
 - Add flour and baking powder: Mix in the flour and baking powder until well combined.
 - Fry the fritters: Heat oil in a skillet, drop spoonfuls of the mixture, and fry until golden brown on both sides.
 - Drain excess oil: Place the fritters on paper towels to remove excess oil.
 - Serve: Enjoy these fritters hot with a side of tzatziki or a fresh salad.
