Grilled Cheese Burritos:

  • 8 large tortillas (burrito size)
  • 2 cups Mexican rice (cooked)
  • 1 pound taco meat
  • 1 cup tortilla strips
  • ¾ cup nacho cheese sauce (warmed)
  • ½ cup sour cream
  • 1 cup Mexican cheese blend (shredded)

Instructions

  1. Prepare Mexican Rice: Cook rice according to package instructions, then mix with tomato sauce, onion powder, garlic powder, chicken bouillon, and salt.
  2. Cook Taco Meat: In a skillet, brown ground beef, then add chili powder, cumin, salt, and oregano. Cook until fully browned.
  3. Make Chipotle Mayo: Blend mayonnaise, sour cream, lime juice, honey, chipotle chiles, garlic powder, and smoked paprika until smooth.
  4. Assemble Burritos: On each tortilla, add rice, taco meat, tortilla strips, cheese sauce, sour cream, chipotle mayo, and shredded cheese. Roll up burritos tightly.
