Description

This Grilled Nectarine Burrata Prosciutto Salad is a delightful blend of sweet and savory flavors. Grilled nectarines, creamy burrata cheese, salty prosciutto, and fresh herbs come together to create a refreshing and elegant dish.

For the Salad

  • 4 nectarines, pitted and quartered
  • 8 ounces burrata cheese, torn
  • 8 slices prosciutto
  • 4 ounces cherry tomatoes, halved
  • 2 heirloom tomatoes, halved and cut into eighths
  • 1/2 cup fresh cherries, pitted and halved
  • 1/2 cup mixed baby spring greens
  • Finishing salt, fresh ground black pepper
  • Grilled baguette, for serving

For the Vinaigrette

  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh oregano, roughly minced
  • 1 tablespoon fresh mint, roughly minced
  • 1 tablespoon fresh lemon thyme leaves
  • 1/2 cup extra virgin olive oil
  • Pinch of salt, fresh ground black pepper as desired

Instructions

  1. Prepare the salad ingredients: Pit and quarter the nectarines, tear the burrata cheese, halve the cherry tomatoes, cut heirloom tomatoes, pit and halve fresh cherries, and mix baby spring greens.
  2. Make the vinaigrette: In a bowl, whisk together lemon juice, white wine vinegar, lemon zest, oregano, mint, lemon thyme, olive oil, salt, and pepper.
  3. Grill the nectarines: Heat a grill pan and grill the nectarines until grill marks appear.
  4. Assemble the salad: Arrange grilled nectarines, burrata, prosciutto, tomatoes, cherries, and greens on a platter. Drizzle with vinaigrette, season with salt and pepper.
  5. Serve: Serve the salad with grilled baguette slices.

Notes
