- 3/4 cup (62g) unsweetened natural cocoa powder (or dutch process cocoa powder), plus more as needed for rolling and work surface
- 1 teaspoon baking powder
- 1/8 teaspoon salt
Wet Ingredients:
- 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- Royal Icing or Easy Cookie Icing
- optional: gel food coloring for tinting icings
Instructions
- Preheat oven: Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Cream butter and sugar: In a large bowl, cream butter and sugar until light and fluffy. Add egg and vanilla, mix until well combined.
- Add dry ingredients: Gradually add dry ingredients into the wet mixture and mix until a dough forms.
- Roll and bake: Roll dough into balls, roll in cocoa powder, place on baking sheets, and flatten slightly. Bake for 8-10 minutes.
- Decorate: Let cookies cool completely, then decorate with royal icing and let set before serving.
