Main Ingredients
- 1 pound boneless skinless chicken breast or thighs
- 1 cup pearl couscous
- ⅔ cup frozen peas (optional, but recommended)
Instructions
- Saute Aromatics: In a large pot, heat oil over medium heat. Add garlic, onion, carrots, celery, ginger, and turmeric. Cook until vegetables are tender.
- Add Broth and Herbs: Pour in chicken broth, rosemary, thyme, salt, and pepper. Bring to a simmer.
- Cook Chicken: Add chicken to the pot and simmer until cooked through. Remove chicken, shred, and return to the pot.
- Add Couscous and Peas: Stir in pearl couscous and peas. Cook until couscous is tender.
- Adjust Seasoning: Taste the soup and adjust salt and pepper as needed.
