Description

These Healthy Ground Chicken Burritos are loaded with flavorful recaito chicken, garlic potatoes, salsa, and cheese, all wrapped in a tortilla for a satisfying meal.

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • ½ cup very finely diced yellow onion

  • 1 jalapeno, seeded and finely diced
  • 1 (4.5 ounce) can diced green chiles

Chicken

  • 1 pound lean ground chicken (or turkey) 93%
  • 2 teaspoons ground cumin
  • ½ teaspoon salt
  • Freshly ground black pepper, to taste

Potatoes

  • 12 tablespoons olive oil
  • 2 ½ cups diced gold potatoes (½ inch diced)
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste

Add-ins

  • ½ cup your favorite salsa or enchilada sauce
  • 1 ½ cup shredded Mexican blend cheese (or any kind of shredded cheese you’d like)

Burritos

  • 8 burrito size tortillas (regular, whole wheat or gluten free)

Instructions

  1. Prepare Recaito Mixture: In a skillet, sauté garlic, onion, bell peppers, cilantro, jalapeno, and green chiles until softened.
  2. Cook Chicken: Add ground chicken, cumin, salt, and pepper to the skillet with the recaito mixture. Cook until chicken is browned.
  3. Prepare Potatoes: In a separate pan, cook diced potatoes with olive oil, garlic powder, salt, and pepper until golden and crispy.
  4. Assemble Burritos: Fill each tortilla with chicken mixture, potatoes, salsa, and cheese. Roll up burritos and place seam side down in a baking dish.
  5. Bake: Bake burritos in the oven until cheese is melted and tortillas are crispy.

Notes
