- 2 tablespoons unsalted butter (30g)
- 7 oz mushrooms, sliced (approximately 2 cups, 200g)
- 2 cloves garlic, finely minced
- 1/2 teaspoon thyme leaves
- 2 cups fresh baby spinach
- 3 oz mozzarella cheese, sliced (80g)
- 1 tablespoon olive oil
Instructions
- Prep the Chicken: Preheat oven to 375°F. Cut a pocket into each chicken breast. Season with salt and pepper.
