Instructions
- Saute Vegetables: In a large pot, melt butter and sauté onion, carrots, celery, and garlic until softened.
- Add Flour & Spices: Stir in flour and paprika, cook for a minute.
- Add Broth & Broccoli: Pour in vegetable broth and add broccoli. Simmer until broccoli is tender.
- Add Milk & Cheese: Stir in milk, cheddar cheese, and blended cottage cheese until cheese melts.
- Season & Serve: Season with salt and pepper, then serve hot.
