  • 3 green onions, sliced
  • 2 large eggs, lightly beaten
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1/2 tsp ground black pepper
  • 1 tsp cornstarch (for chicken coating)
  • 1 tbsp water (for cornstarch slurry)

Instructions

  1. Prepare the Chicken: In a bowl, mix the chicken pieces with cornstarch, water, and soy sauce. Let it marinate for 15 minutes.
  2. Cook the Chicken: In a large skillet, heat oil and stir-fry the marinated chicken until cooked through. Set aside.
  3. Prepare the Rice: In the same skillet, add more oil if needed and sauté garlic until fragrant. Add rice and stir-fry for a few minutes.
  4. Combine Ingredients: Push the rice to one side of the skillet and scramble the eggs on the other side. Mix everything together and add peas, carrots, green onions, and cooked chicken.
