- 1 green bell pepper, diced

- 1 cup sour cream
- 1 cup shredded cheddar cheese

Instructions
- Preheat Oven: Preheat the oven to 375°F.
- Cook Ground Beef: In a skillet, cook the ground beef over medium heat until browned. Add onions, bell pepper, and garlic, and cook until vegetables are soft.
- Layer Potatoes: In a greased casserole dish, layer half of the sliced potatoes. Top with the beef mixture.
- Mix Sauce: In a bowl, mix the cream of mushroom soup and sour cream. Season with salt and pepper.
- Assemble Casserole: Pour the sauce over the beef and potatoes. Top with the remaining sliced potatoes.
- Bake: Cover the dish with foil and bake for 45 minutes. Remove foil, sprinkle with cheddar cheese and fried onions, and bake for an additional 15 minutes until cheese is melted and bubbly.
- Serve: Garnish with green onions and parsley before serving.
