This hearty Hobo Casserole combines layers of thinly sliced potatoes with seasoned ground beef, topped with a generous amount of melted cheddar and Parmesan cheese.

For the Casserole:
- 1 lb ground beef
- 4–5 medium potatoes, thinly sliced
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/2 cup beef broth
- 1/4 cup milk (optional)
For the Seasoning & Cheese:
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt & pepper, to taste
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley, for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Brown the beef: In a skillet, cook the ground beef until browned. Drain excess fat.
- Sauté onions and garlic: Add olive oil, onion, and garlic to the skillet. Cook until softened.
- Layer the casserole: In a baking dish, layer potatoes, beef mixture, and cheese, repeating until all ingredients are used.
- Season and bake: Sprinkle with Italian seasoning, paprika, salt, and pepper. Pour beef broth and milk over the casserole. Cover with foil and bake for 45 minutes.
- Top with cheese: Remove foil, top with remaining cheese, and bake uncovered for another 15 minutes or until the cheese is melted and bubbly.
- Serve: Garnish with fresh parsley before serving.
