Description

This hearty Hobo Casserole combines layers of thinly sliced potatoes with seasoned ground beef, topped with a generous amount of melted cheddar and Parmesan cheese.

  • 1 lb ground beef
  • 45 medium potatoes, thinly sliced
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup milk (optional)

For the Seasoning & Cheese:

  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt & pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Brown the beef: In a skillet, cook the ground beef until browned. Drain excess fat.
  3. Sauté onions and garlic: Add olive oil, onion, and garlic to the skillet. Cook until softened.
  4. Layer the casserole: In a baking dish, layer potatoes, beef mixture, and cheese, repeating until all ingredients are used.
  5. Season and bake: Sprinkle with Italian seasoning, paprika, salt, and pepper. Pour beef broth and milk over the casserole. Cover with foil and bake for 45 minutes.
  6. Top with cheese: Remove foil, top with remaining cheese, and bake uncovered for another 15 minutes or until the cheese is melted and bubbly.
  7. Serve: Garnish with fresh parsley before serving.
