    • 2 teaspoons baking soda
    • ½ tablespoon salt

Toppings:

  • 1 egg white, optional
  • 1 tablespoon water, optional

Instructions

  1. Activate Yeast: Dissolve yeast in warm water with maple syrup, let it sit until foamy.
  2. Mix Dough: Combine flour, salt, and yeast mixture. Knead until smooth, let rise.
  3. Shape Bagels: Divide dough, shape into bagels, let rise again.
  4. Poach Bagels: Boil water with maple syrup, baking soda, and salt. Poach bagels for 1 minute each side.
