Ingredients

Main Ingredients:

  • 1 tbsp olive oil
  • 50 g / 3.5 tbsp unsalted butter
  • 1/2 cup / 75 g all-purpose flour

Vegetables:

  • 1 garlic clove, minced
  • 1/2 small brown onion, finely chopped
  • 1 small carrot, diced
  • 1/2 red capsicum/bell pepper, finely chopped
  • 1 small celery stick, diced

Broth and Seasonings:

  • 2 cups / 500 ml chicken stock/broth
  • 3 cups / 750 ml milk
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried thyme
  • 1/4 tsp black pepper

Additions:

  • 3/4 cup frozen peas
  • 1 cup cooked chicken, diced or shredded
  • 2 slices white bread, cubed
  • Olive oil spray
  • Salt

Instructions

  1. Saute Aromatics: Heat olive oil, saute garlic and onion.
  2. Add Vegetables: Add carrots, celery, and capsicum, cook slightly.
  3. Create Roux: Melt butter, stir in flour to make a roux.
  4. Add Liquid: Gradually pour in broth and milk, season with spices.
  5. Simmer Soup: Add chicken and peas, simmer until thickened.
  6. Adjust Seasoning: Taste and adjust salt and pepper, serve with homemade croutons.
