Main Ingredients:
- 1 tbsp olive oil
- 50 g / 3.5 tbsp unsalted butter
- 1/2 cup / 75 g all-purpose flour
Vegetables:
- 1 garlic clove, minced
- 1/2 small brown onion, finely chopped
- 1 small carrot, diced
- 1/2 red capsicum/bell pepper, finely chopped
- 1 small celery stick, diced
Broth and Seasonings:
- 2 cups / 500 ml chicken stock/broth
- 3 cups / 750 ml milk
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp dried thyme
- 1/4 tsp black pepper
Additions:
- 3/4 cup frozen peas
- 1 cup cooked chicken, diced or shredded
- 2 slices white bread, cubed
- Olive oil spray
- Salt
Instructions
- Saute Aromatics: Heat olive oil, saute garlic and onion.
- Add Vegetables: Add carrots, celery, and capsicum, cook slightly.
- Create Roux: Melt butter, stir in flour to make a roux.
- Add Liquid: Gradually pour in broth and milk, season with spices.
- Simmer Soup: Add chicken and peas, simmer until thickened.
- Adjust Seasoning: Taste and adjust salt and pepper, serve with homemade croutons.
