Instructions

  1. Preheat oven: Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add wet ingredients: Mix in the egg, honey, and vanilla extract until well combined.
  4. Add dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and cloves. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Stir in oats: Fold in the oats until evenly distributed.
  6. Bake: Drop spoonfuls of dough onto the prepared baking sheets and bake for 10-12 minutes, or until lightly golden. Allow to cool completely on a wire rack.
  7. Assemble: Once the cookies are cooled, sandwich together with your favorite cream filling.
