Garlic confit:

  • 2 bulbs garlic
  • 2 cups olive oil, extra virgin

Honey garlic butter salmon:

  • 1 lb skinless salmon, 500g
  • 1 tbsp olive oil, extra virgin
  • 4 tbsp butter, unsalted
  • 20 garlic confit cloves, OR 6 raw garlic cloves, finely sliced
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp parsley, finely chopped
  • fine sea salt
  • black pepper

Instructions

  1. Garlic confit: Preheat the oven and prepare the garlic cloves by peeling and submerging in olive oil. Bake until browned.
  2. Honey garlic butter salmon: Season the salmon, cook in olive oil, then make the garlic butter sauce with honey and lemon. Cook the salmon in the sauce, basting until done. Finish with parsley.

  • You can adjust the sweetness by adding more or less honey to suit your taste preferences.
