Description

This Honey Lime Chicken & Avocado Rice Stack is a flavorful and refreshing dish that combines tender chicken marinated in honey and lime, with creamy avocado rice. It’s a perfect balance of sweet, tangy, and savory flavors.

Marinated Chicken:

    • 2 boneless, skinless chicken breasts
    • 1⁄4 cup honey
    • Juice of 2 limes
    • Zest of 1 lime
    • 2 cloves garlic, minced
    • 1 teaspoon ground cumin
    • Salt and pepper to taste

Avocado Rice:

  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 avocado, diced
  • 1⁄4 cup red onion, finely chopped
  • 1⁄4 cup fresh cilantro, chopped
  • 1 tablespoon olive oil
  • Lime wedges, for serving

Instructions

  1. Marinate the Chicken: In a bowl, mix honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Cook the Rice: In a pot, bring chicken broth to a boil. Add jasmine rice, cover, and simmer until cooked. Fluff with a fork and let cool slightly.
  3. Grill the Chicken: Grill marinated chicken until cooked through. Let rest before slicing.
  4. Assemble the Stack: In a bowl, mix avocado, red onion, cilantro, olive oil, salt, and pepper with cooked rice. Using a mold, layer rice and sliced chicken. Serve with lime wedges.
