Marinated Chicken:

Avocado Rice:
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 avocado, diced
- 1⁄4 cup red onion, finely chopped
- 1⁄4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- Lime wedges, for serving
Instructions
- Marinate the Chicken: In a bowl, mix honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
- Cook the Rice: In a pot, bring chicken broth to a boil. Add jasmine rice, cover, and simmer until cooked. Fluff with a fork and let cool slightly.
- Grill the Chicken: Grill marinated chicken until cooked through. Let rest before slicing.
- Assemble the Stack: In a bowl, mix avocado, red onion, cilantro, olive oil, salt, and pepper with cooked rice. Using a mold, layer rice and sliced chicken. Serve with lime wedges.
