- 2 boneless, skinless chicken breasts

- 1⁄2 cup fresh cranberries
- 1⁄4 cup honey
- 1⁄4 cup orange juice

- 1⁄4 teaspoon salt

- 4 ounces brie cheese, rind removed and cut into small pieces

- 1 tablespoon butter, melted
Instructions
- Prep the Chicken: Preheat oven to 375°F. Cut a pocket into each chicken breast.
- Make the Filling: In a saucepan, combine cranberries, honey, orange juice, cinnamon, ginger, salt, and pepper. Cook until cranberries burst. Remove from heat and stir in brie, parsley, and breadcrumbs.
- Stuff the Chicken: Divide filling between chicken breasts. Secure with toothpicks.
- Cook the Chicken: In an oven-safe skillet, sear chicken. Bake until internal temperature reaches 165°F.
- Serve: Remove toothpicks, slice, and enjoy!
