Description

King Ranch Beef Casserole is a hearty and flavorful Tex-Mex dish featuring layers of seasoned ground beef, creamy sauces, cheese, and tortillas, baked to perfection.

  • 1 large white onion, finely diced
  • 2 pounds lean ground beef, cooked and crumbled
  • 2 cups beef broth
  • 1 can black beans
  • 1 can condensed cream of mushroom soup
  • 1 jar salsa verde
  • 1 can mild enchilada sauce
  • 8 ounces sour cream
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic salt
  • 1 teaspoon black pepper
  • 2 cans fire-roasted diced green chiles
  • 20 corn tortillas, cut into strips
  • 4 cups sharp Cheddar cheese
  • 1 1/2 cups Monterey Jack cheese
  • 1 cup Cotija cheese, crumbled
  • Fresh cilantro

Instructions

  1. Preheat the oven to 350°F and spray a baking dish.
  2. Sauté onion in oil, add beef, cook, and drain.
  3. Combine broth, beans, soup, sauces, sour cream, and spices in the pot.
  4. Stir in chiles, tortilla strips, and cheese.
  5. Pour mixture into the baking dish, top with cheese, and bake.
  6. Serve with Cotija cheese and cilantro garnish.
