- 1 can mild enchilada sauce
- 8 ounces sour cream
- 1 tablespoon smoked paprika
- 1 tablespoon garlic salt
- 1 teaspoon black pepper
- 2 cans fire-roasted diced green chiles
- 20 corn tortillas, cut into strips
- 4 cups sharp Cheddar cheese
- 1 1/2 cups Monterey Jack cheese
- 1 cup Cotija cheese, crumbled
- Fresh cilantro
Instructions
- Preheat the oven to 350°F and spray a baking dish.
- Sauté onion in oil, add beef, cook, and drain.
- Combine broth, beans, soup, sauces, sour cream, and spices in the pot.
- Stir in chiles, tortilla strips, and cheese.
- Pour mixture into the baking dish, top with cheese, and bake.
- Serve with Cotija cheese and cilantro garnish.
