- 3–4 lbs Chuck roast
- Salt and black pepper
For the Sauce:
- ½ cup soy sauce
- 2 tbsp gochujang Korean chili paste
- 3 tbsp sesame oil
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 tbsp honey or brown sugar
- ½ cup Korean pear or apple, grated
- 1 tbsp rice vinegar

- Optional: 1 Korean radish, sliced

Instructions
- Prep the beef: Season the chuck roast with salt and pepper before searing.
- Make the sauce: Mix soy sauce, gochujang, sesame oil, garlic, ginger, honey, Korean pear, and rice vinegar.
- Cook: Place beef, vegetables, and sauce in a slow cooker. Cook on low for several hours until the beef is tender.
- Serve: Garnish with green onions and sesame seeds before serving.
Notes
- You can add Korean radish for an extra layer of flavor.
- Adjust the spice level by adding more or less gochujang.
