Description

Lasagna Roll Ups are a delicious twist on classic lasagna, filled with a cheesy spinach mixture, rolled up in lasagna noodles, and baked to perfection with marinara sauce and melted cheese on top.

  • Extra virgin olive oil
  • 9 dry lasagna noodles
  • 3 cups homemade marinara sauce, (or store-bought), divided
  • 1 3/4 cups part-skim ricotta cheese
  • 1 large egg
  • 1 cup shredded mozzarella, divided
  • 1/2 cup freshly grated Parmesan cheese
  • 10 ounce package frozen spinach, thawed and squeezed dry
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried Italian seasoning
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground nutmeg

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the lasagna noodles: Cook the lasagna noodles according to package instructions, then drain and lay them flat on a baking sheet.
  3. Prepare the filling: In a mixing bowl, combine ricotta cheese, egg, 1/2 cup mozzarella, Parmesan, spinach, garlic, Italian seasoning, salt, pepper, and nutmeg.
  4. Assemble the roll-ups: Spread 1 cup of marinara sauce in the bottom of the baking dish. Place a spoonful of the filling on each lasagna noodle, roll them up, and arrange them in the dish seam side down.
  5. Bake: Pour the remaining marinara sauce over the roll-ups, sprinkle with the remaining mozzarella, cover with foil, and bake for 25 minutes. Then uncover and bake for an additional 10 minutes until the cheese is bubbly.
  6. Serve: Let the roll-ups cool slightly before serving, and enjoy!

Notes

  • You can customize the filling by adding cooked ground beef, turkey, or sausage.
  • Feel free to use fresh spinach instead of frozen, just make sure to cook and chop it before adding to the filling.
  • These roll-ups can be assembled ahead of time and refrigerated until ready to bake.
