Description

These lemon meatballs are bursting with flavor from the zesty lemon, garlic, and herb seasoning. The juicy meatballs are cooked in a delicious lemon-infused sauce, making it a perfect dish for a quick and flavorful meal.

For the Meatball Mixture:

  • 1lb Ground Beef, 85-15 mix
  • 2 Cloves of Garlic, minced
  • 1/4 cup Parsley, minced
  • 2 tsp Garlic and Herb Seasoning
  • Zest of 1/2 Lemon
  • 1 Egg
  • 1/4 cup Breadcrumbs
  • Salt to taste

For the Sauce:

  • 2 Tbsp Olive Oil
  • 1 Tbsp Butter
  • 1/2 cup Flour
  • Juice of 1/2 Lemon
  • 1 1/4 cup Chicken stock
  • 1 Clove of Garlic, smashed
  • Chopped Parsley

Instructions

  1. Prepare the Meatball Mixture: In a bowl, mix ground beef, garlic, parsley, seasoning, lemon zest, egg, breadcrumbs, and salt. Form into meatballs.
  2. Cook the Meatballs: Brown meatballs in a pan until cooked through. Remove from pan.
  3. Make the Sauce: In the same pan, heat oil and butter, add flour, then whisk in lemon juice, chicken stock, garlic, and parsley. Simmer until thickened.
  4. Serve: Add meatballs back to the sauce, cook for a few more minutes. Serve hot.
