For the Meatball Mixture:
- 1lb Ground Beef, 85-15 mix
- 2 Cloves of Garlic, minced
- 1/4 cup Parsley, minced
- 2 tsp Garlic and Herb Seasoning
- Zest of 1/2 Lemon
- 1 Egg
- 1/4 cup Breadcrumbs
- Salt to taste
For the Sauce:
- 2 Tbsp Olive Oil
- 1 Tbsp Butter
- 1/2 cup Flour
- Juice of 1/2 Lemon
- 1 1/4 cup Chicken stock
- 1 Clove of Garlic, smashed
- Chopped Parsley
Instructions
- Prepare the Meatball Mixture: In a bowl, mix ground beef, garlic, parsley, seasoning, lemon zest, egg, breadcrumbs, and salt. Form into meatballs.
- Cook the Meatballs: Brown meatballs in a pan until cooked through. Remove from pan.
- Make the Sauce: In the same pan, heat oil and butter, add flour, then whisk in lemon juice, chicken stock, garlic, and parsley. Simmer until thickened.
- Serve: Add meatballs back to the sauce, cook for a few more minutes. Serve hot.

- You can adjust the lemon juice amount based on your preference for tartness.
