  • 1 tsp fine salt (6g)
  • 1 cup buttermilk or whole milk (240g)
  • 1/2 cup granulated sugar (100g)
  • 1/2 cup unsalted butter, room temperature (113g)
  • 2 large eggs, room temperature (112g)
  • 2 Tbsp fresh lemon zest, or the zest of 2 large lemons (6g)

Lemon Roll Filling

  • 1/2 cup granulated sugar (100g)
  • 1/2 cup packed light brown sugar (100g)
  • 2 Tbsp fresh lemon zest, or the zest of 2 large lemons (6g)
  • 1/2 cup unsalted butter, softened (113g)

Lemon Icing

  • 2 cups powdered sugar (250g)
  • 1/4 cup fresh lemon juice (60g)
  • 2 Tbsp unsalted butter, melted (28g)

Instructions

  1. Prepare the Dough: Combine flour, yeast, poppy seeds, and salt. Mix in buttermilk, sugar, butter, eggs, and lemon zest. Knead until smooth.
  2. Make the Filling: Mix sugars, lemon zest, and butter until smooth.
  3. Assemble: Roll out dough, spread filling, roll up, and cut into rolls.
  4. Bake: Place rolls in a pan and let rise. Bake until golden brown.
  5. Ice: Whisk powdered sugar, lemon juice, and butter. Drizzle over warm rolls.

Notes

  • You can add chopped nuts or raisins to the filling for extra texture.
