Description

These Lentil Sweet Potato Patties are a delicious and healthy option for a meal or snack. Packed with protein and fiber, they are easy to make and perfect for a quick and nutritious meal.


Ingredients

  • 1 can lentils (15 oz / 400 g can or 1 1/2 cups / 230 g cooked lentils)
  • 1 sweet potato (medium to large)
  • 1/2 cup all-purpose flour
  • 1 cup crumbled feta (sub 1/2 cup grated parmesan)
  • 1 large egg
  • 1/2 red onion (finely chopped)
  • 1 clove garlic (grated)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin (sub 1 tsp paprika)
  • 1/2 teaspoon salt + black pepper
  • 1 tablespoon olive oil (or more as needed to cook the patties)

Instructions

  1. Cook the sweet potato: Poke the sweet potato with a fork and microwave until soft. Scoop out the insides into a bowl.
  2. Mash with Lentils: Add lentils to the bowl and mash with a fork until smooth.
  3. Mix Everything Together: Add flour, feta, egg, onion, garlic, oregano, cumin, salt, and pepper. Mix well.
  4. Cook: Heat oil in a pan, scoop the mixture, flatten, and cook until golden on both sides.
  5. Serve: Enjoy warm with tzatziki, yogurt, or lemon.

Notes

  • Substitute grated parmesan for feta if desired.
  • If the mixture is too wet, add more flour for consistency.
