  • 8 strips bacon
  • 3 tablespoons salted butter
  • 1 medium onion, finely diced
  • 5 cloves garlic, minced
  • 3 tablespoons flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 tablespoon roasted garlic base by Better Than Bouillon
  • 2 ounces cream cheese, softened
  • 4 ounces sharp cheddar, shredded
  • 4 ounces gruyere, shredded
  • 4 ounces smoked gouda, shredded
  • 1/3 cup chives, minced
  • Seasonings:
    • 1 tablespoon fresh thyme leaves
    • 2 tsp Italian seasoning
    • 1 tsp smoked paprika
    • 1 tsp dry mustard powder
    • 1 tsp freshly cracked pepper
    • 1/2 tsp salt

Instructions

  1. Preheat the oven to 375 degrees.
  2. Cook bacon until crispy, crumble, and set aside.
  3. Sauté onions and garlic in butter until softened. Add flour and milk gradually, stirring constantly. Mix in cream cheese, roasted garlic base, seasonings, and thyme.
  4. Layer sauce, potatoes, and cheese in a casserole dish. Bake until potatoes are tender. Top with remaining cheese and bacon.
