- 8 strips bacon
- 3 tablespoons salted butter
- 1 medium onion, finely diced
- 5 cloves garlic, minced
- 3 tablespoons flour
- 3 cups whole milk
- 1 cup heavy cream
- 1 tablespoon roasted garlic base by Better Than Bouillon
- 2 ounces cream cheese, softened
- 4 ounces sharp cheddar, shredded
- 4 ounces gruyere, shredded
- 4 ounces smoked gouda, shredded
- 1/3 cup chives, minced
- Seasonings:
- 1 tablespoon fresh thyme leaves
- 2 tsp Italian seasoning
- 1 tsp smoked paprika
- 1 tsp dry mustard powder
- 1 tsp freshly cracked pepper
- 1/2 tsp salt
Instructions
- Preheat the oven to 375 degrees.
- Cook bacon until crispy, crumble, and set aside.
- Sauté onions and garlic in butter until softened. Add flour and milk gradually, stirring constantly. Mix in cream cheese, roasted garlic base, seasonings, and thyme.
- Layer sauce, potatoes, and cheese in a casserole dish. Bake until potatoes are tender. Top with remaining cheese and bacon.
