Description

This Mac and Cheese Meatloaf Casserole combines the classic flavors of mac and cheese with the heartiness of meatloaf in a comforting casserole dish.

Meatloaf Layer:

  • 15 Ritz crackers
  • 1 pound lean ground beef (I used 90/10)
  • 1 (1 oz) packet onion soup mix
  • 1 egg
  • 1/4 cup ketchup
  • 1/2 cup bbq sauce, divided

Mac and Cheese Layer:

  • 2 cups water
  • 8 oz elbow macaroni noodles
  • 1 Tbsp butter
  • 1 tsp kosher salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 1/2 cup milk
  • 2 cups shredded sharp cheddar cheese, divided

Instructions

  1. Preheat oven: Preheat the oven to 350°F.
  2. Prepare meatloaf layer: In a large bowl, crush the Ritz crackers and mix with ground beef, onion soup mix, egg, ketchup, and half of the bbq sauce. Press mixture into the bottom of a casserole dish.
  3. Prepare mac and cheese layer: Cook macaroni noodles according to package instructions. Drain and mix with butter, salt, onion powder, garlic powder, pepper, milk, and 1 cup of cheddar cheese. Pour over the meatloaf layer.
  4. Bake: Top with remaining cheddar cheese and bbq sauce. Bake for 25-30 minutes or until cheese is melted and bubbly.

Notes
