This Mac and Cheese Meatloaf Casserole combines the classic flavors of mac and cheese with the heartiness of meatloaf in a comforting casserole dish.

Meatloaf Layer:
- 15 Ritz crackers
- 1 pound lean ground beef (I used 90/10)
- 1 (1 oz) packet onion soup mix
- 1 egg
- 1/4 cup ketchup
- 1/2 cup bbq sauce, divided
Mac and Cheese Layer:
- 2 cups water
- 8 oz elbow macaroni noodles
- 1 Tbsp butter
- 1 tsp kosher salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp pepper
- 1/2 cup milk
- 2 cups shredded sharp cheddar cheese, divided
Instructions
- Preheat oven: Preheat the oven to 350°F.
- Prepare meatloaf layer: In a large bowl, crush the Ritz crackers and mix with ground beef, onion soup mix, egg, ketchup, and half of the bbq sauce. Press mixture into the bottom of a casserole dish.
- Prepare mac and cheese layer: Cook macaroni noodles according to package instructions. Drain and mix with butter, salt, onion powder, garlic powder, pepper, milk, and 1 cup of cheddar cheese. Pour over the meatloaf layer.
- Bake: Top with remaining cheddar cheese and bbq sauce. Bake for 25-30 minutes or until cheese is melted and bubbly.
Notes
- You can customize this casserole by adding your favorite mix-ins like diced vegetables or bacon.
- Feel free to use your favorite cheese blend in the mac and cheese layer for added flavor.
