For the Panna Cotta Base:
- 2 cups heavy cream
- 1 cup whole milk
- 0.5 cup granulated sugar
- 1 vanilla bean
- 2.5 teaspoon unflavored gelatin
- 3 tablespoon cold water

For the Mango Layer:
- 2 ripe mangoes
- 2 tablespoon sugar
- 1 teaspoon lemon juice
- 1 teaspoon unflavored gelatin
- 2 tablespoon cold water
Instructions
- Prepare Panna Cotta Base: Combine heavy cream, milk, sugar, and vanilla in a saucepan. Bloom gelatin in cold water, then add to the mixture. Pour into molds and refrigerate to set.
- Create Mango Layer: Puree mangoes with sugar and lemon juice. Bloom gelatin and add to the mango mixture. Layer on top of the set panna cotta. Chill until firm.
