For the Cookies:
- 1 stick (8 tablespoons) unsalted butter, softened
- 1/3 cup brown sugar, packed
- 1/3 cup granulated sugar
- 1 large egg
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon maple extract
- 1 cup all-purpose flour
- 1 tablespoon cornstarch
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 & 1/3 cups old-fashioned oats
For the Maple Glaze:
- 1 cup powdered sugar
- 1 tablespoon unsalted butter, melted
- 2 tablespoons pure maple syrup
- 1–2 tablespoons milk (as needed for consistency)
Instructions
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg, maple syrup, vanilla extract, and maple extract until well combined.
- In a separate bowl, whisk together the flour, cornstarch, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- Stir in the oats until evenly distributed throughout the dough.
- Scoop the dough onto the prepared baking sheet and flatten slightly with a fork.
- Bake for 10-12 minutes or until the edges are lightly golden.
- While the cookies cool, prepare the maple glaze by whisking together the powdered sugar, melted butter, maple syrup, and milk until smooth.
- Drizzle the glaze over the cooled cookies and allow it to set before serving.
Notes
- For extra maple flavor, you can add a touch more maple extract to both the cookie dough and the glaze.
- Feel free to add chopped nuts or dried fruits to the cookie dough for added texture and flavor.
