  • 4 thick-cut bacon slices
  • 2 (8 ounce) boneless, skinless chicken breasts, pounded to 1 inch thickness

  • 3/4 cup drained julienne-cut sundried tomatoes in oil with herbs
  • 1/2 cup finely chopped shallot
  • 4 large garlic cloves, finely chopped
  • 1 1/2 teaspoons dried Italian seasoning
  • 1/2 teaspoon crushed red pepper
  • 2 tablespoons tomato paste
  • 1/2 cup lower-sodium chicken broth
  • 1 cup heavy whipping cream
  • 1 (20 ounce) package refrigerated cheese tortellini
  • 1/2 cup pre-grated Parmesan cheese, plus more for garnish
  • torn fresh basil leaves

Instructions

  1. Cook Bacon: In a large skillet, cook bacon until crispy, then remove and chop into pieces.
  2. Cook Chicken: Season chicken with pepper and 1 teaspoon salt, then cook in the same skillet until browned and cooked through. Remove and set aside.
  3. Make Sauce: In the skillet, sauté shallot, garlic, Italian seasoning, and red pepper. Stir in tomato paste, chicken broth, and cream. Simmer until thickened.
  4. Combine: Add chicken, bacon, sundried tomatoes, and tortellini to the sauce. Cook until heated through.
  5. Serve: Garnish with Parmesan and basil before serving.

Notes

  • You can use dried tortellini if refrigerated is not available.
