- 3/4 cup drained julienne-cut sundried tomatoes in oil with herbs
- 1/2 cup finely chopped shallot
- 4 large garlic cloves, finely chopped
- 1 1/2 teaspoons dried Italian seasoning
- 1/2 teaspoon crushed red pepper
- 2 tablespoons tomato paste
- 1/2 cup lower-sodium chicken broth
- 1 cup heavy whipping cream
- 1 (20 ounce) package refrigerated cheese tortellini
- 1/2 cup pre-grated Parmesan cheese, plus more for garnish

Instructions
- Cook Bacon: In a large skillet, cook bacon until crispy, then remove and chop into pieces.
- Cook Chicken: Season chicken with pepper and 1 teaspoon salt, then cook in the same skillet until browned and cooked through. Remove and set aside.
- Make Sauce: In the skillet, sauté shallot, garlic, Italian seasoning, and red pepper. Stir in tomato paste, chicken broth, and cream. Simmer until thickened.
- Combine: Add chicken, bacon, sundried tomatoes, and tortellini to the sauce. Cook until heated through.
- Serve: Garnish with Parmesan and basil before serving.

- You can use dried tortellini if refrigerated is not available.
