Description

Main Ingredients:

  • 1 (8-ounce) jar sun-dried tomatoes in oil, drained
  • 1 pound ground Italian sausage, mild or spicy
  • 1 medium white onion, diced
  • 1 small red bell pepper, diced
  • 4 cloves garlic, minced
  • 6 cups chicken stock
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • 6 ounces uncooked small pasta* (I used small shells)
  • 2 large handfuls fresh baby spinach, roughly chopped
  • 1/2 cup heavy cream
  • 1/2 cup julienned fresh basil leaves, divided

Topppings:

  • black pepper
  • freshly-grated Parmesan cheese

Instructions

  1. Brown the sausage: In a large pot, cook the Italian sausage over medium heat until browned, breaking it into small pieces.
  2. Add vegetables: Add the onion, bell pepper, and garlic to the pot. Cook until the vegetables are softened.
  3. Simmer soup: Pour in the chicken stock, Italian seasoning, and red pepper flakes. Bring to a simmer.
  4. Cook pasta: Add the pasta to the pot and cook until al dente.
  5. Finish the soup: Stir in the spinach, cream, and half of the basil. Cook until the spinach is wilted.
  6. Serve: Ladle the soup into bowls and top with remaining basil, black pepper, and Parmesan cheese.

Notes

  • You can adjust the spice level by using mild or spicy Italian sausage.
  • Feel free to add more vegetables like mushrooms or zucchini to the soup.
