- 1 pound ground Italian sausage, mild or spicy
- 1 medium white onion, diced
- 1 small red bell pepper, diced
- 4 cloves garlic, minced
- 6 cups chicken stock
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes
- 6 ounces uncooked small pasta* (I used small shells)
- 2 large handfuls fresh baby spinach, roughly chopped
- 1/2 cup heavy cream
- 1/2 cup julienned fresh basil leaves, divided

Instructions
- Brown the sausage: In a large pot, cook the Italian sausage over medium heat until browned, breaking it into small pieces.
- Add vegetables: Add the onion, bell pepper, and garlic to the pot. Cook until the vegetables are softened.
- Simmer soup: Pour in the chicken stock, Italian seasoning, and red pepper flakes. Bring to a simmer.
- Cook pasta: Add the pasta to the pot and cook until al dente.
- Finish the soup: Stir in the spinach, cream, and half of the basil. Cook until the spinach is wilted.
- Serve: Ladle the soup into bowls and top with remaining basil, black pepper, and Parmesan cheese.

- You can adjust the spice level by using mild or spicy Italian sausage.
- Feel free to add more vegetables like mushrooms or zucchini to the soup.
