Description

This Mediterranean Ground Beef Stir Fry is a flavorful and healthy dish that combines ground beef with colorful veggies and feta cheese for a satisfying meal. It’s quick and easy to make, perfect for busy weeknights.

    • 1 tablespoon olive oil
    • 1 red bell pepper, deseeded and diced
    • 1 pint cherry tomatoes, sliced in half
    • 8 ounces baby spinach
    • 4 garlic cloves, minced
    • 2 green onion, thinly sliced, white and green parts separated
    • 1 pound ground beef
    • 1/2 teaspoon dried oregano
    • kosher salt and freshly ground black pepper, to taste
    • 2 tablespoons crumbled feta (optional)

Instructions

  1. Heat Oil: Heat olive oil in a large skillet over medium heat.
  2. Cook Veggies: Add bell pepper, cherry tomatoes, garlic, and white parts of green onion. Cook until veggies are tender.
  3. Add Beef: Add ground beef, oregano, salt, and pepper. Cook until beef is browned and cooked through.
  4. Finish Dish: Stir in spinach and green parts of green onion. Cook until spinach is wilted. Serve with optional feta on top.
