- 3 pounds Yukon Gold potatoes, peeled
Herb Butter Mixture
- 6 tablespoons butter, melted
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon pepper
Additional Ingredients
- 1 cup chicken broth
- 2–3 cloves garlic, peeled and crushed
- 2 tablespoons fresh chopped parsley
Instructions
- Preheat Oven: Place oven rack in upper-middle position and preheat to 475 degrees. Spray a large rimmed baking sheet with non-stick cooking spray.
- Mix Butter Mixture: In a small bowl, combine melted butter, dried thyme, dried rosemary, salt, and pepper.
- Prepare Potatoes: Cut potatoes into slices, toss in butter mixture, and arrange on baking sheet.
- Roast Potatoes: Roast for 15 minutes, flip, roast for another 15 minutes, then add chicken broth and garlic, roast for additional 10-15 minutes until tender.
- Finish and Serve: Sprinkle with parsley before serving.
Notes
- For extra flavor, you can add grated Parmesan cheese or chopped bacon before serving.
- Make sure to flip the potatoes during roasting to ensure even cooking.
