Description

These Melt in Your Mouth Potatoes are perfectly crispy on the outside and tender on the inside, with a flavorful herb and garlic butter coating. They are a delicious side dish that will have everyone asking for seconds!

  • 3 pounds Yukon Gold potatoes, peeled

Herb Butter Mixture

  • 6 tablespoons butter, melted
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Additional Ingredients

  • 1 cup chicken broth
  • 23 cloves garlic, peeled and crushed
  • 2 tablespoons fresh chopped parsley

Instructions

  1. Preheat Oven: Place oven rack in upper-middle position and preheat to 475 degrees. Spray a large rimmed baking sheet with non-stick cooking spray.
  2. Mix Butter Mixture: In a small bowl, combine melted butter, dried thyme, dried rosemary, salt, and pepper.
  3. Prepare Potatoes: Cut potatoes into slices, toss in butter mixture, and arrange on baking sheet.
  4. Roast Potatoes: Roast for 15 minutes, flip, roast for another 15 minutes, then add chicken broth and garlic, roast for additional 10-15 minutes until tender.
  5. Finish and Serve: Sprinkle with parsley before serving.

Notes

  • For extra flavor, you can add grated Parmesan cheese or chopped bacon before serving.
  • Make sure to flip the potatoes during roasting to ensure even cooking.
