- 3 cups crushed tortilla chips or Dorito Nacho Cheese chips, divided
- 15 oz. black beans, drained and rinsed
- 2 cups chopped cooked chicken (rotisserie chicken works well)
- 1 teaspoon ground cumin
- 21 oz. cream of chicken soup (2 cans, DO NOT add any water or milk)
- 10 oz. can Rotel tomatoes, undrained
- 2 cups shredded jack cheese
- 2 cups shredded medium cheddar cheese
Garnish:
- 1 tomato, diced
- 1 bunch cilantro, rinsed and chopped
- Jalapeños (optional)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C).
- Layer Casserole: In a 9×13 inch baking dish, layer half of the crushed tortilla chips, black beans, chicken, cumin, cream of chicken soup, Rotel tomatoes, jack cheese, and cheddar cheese. Repeat the layers.
- Bake: Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Garnish: Top with diced tomatoes, chopped cilantro, and jalapeños if desired. Serve hot.
