  • ¾ cup granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • ⅓ cup heavy cream

Topping:

  • ½ cup caramel sauce
  • 4 ounces semi-sweet chocolate, melted

Instructions

  1. Prepare the Cookie Crust: Mix all crust ingredients together, press into mini cupcake liners, and bake until golden.
  2. Make the Cheesecake Filling: Beat cream cheese and sugar, then add eggs, vanilla, and cream until smooth.
