- 1/4 cup vegetable oil or melted coconut oil
- 3/4 cup packed light brown sugar
- 1 teaspoon pure vanilla extract
- 1 1/2 cups packed shredded zucchini
Additional:
- 1 cup semisweet chocolate chips, divided (3/4 cup mixed in, 1/4 cup on top)
Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix dry ingredients: In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Combine wet ingredients: In another bowl, beat the eggs, melted butter, oil, sugar, and vanilla. Stir in the shredded zucchini.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture until just combined. Fold in 3/4 cup of chocolate chips.
- Bake: Pour the batter into the prepared pan, sprinkle the remaining chocolate chips on top, and bake for about 55-60 minutes or until a toothpick inserted into the center comes out clean.
- Cool and enjoy: Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
Notes
- You can add chopped nuts or dried fruits for extra texture and flavor.
- Make sure to squeeze out excess moisture from the shredded zucchini to prevent the bread from becoming too wet.
