Description

This Napa cabbage slaw recipe is a refreshing and flavorful dish perfect for a light meal or as a side. The crunchy cabbage, snow peas, and radicchio are tossed in a delicious miso ginger dressing, creating a well-balanced and nutritious salad.


Ingredients

  • 1012 large whole leaves of Napa cabbage thinly sliced
  • 3 oz. snow peas strings removed and sliced to long thin strips
  • 8 oz Radicchio or Purple cabbage thinly sliced, quarter of 1 small
  • 2 bulb bulb Scallion diced
  • Sprinkle toasted sliced almonds or peanuts
  • Sprinkle wonton chips optional

Miso ginger dressing: (makes ⅔ cup):

  • 1 tsp soy sauce or coconut aminos
  • 5 tbsp rice vinegar
  • 1.52 tsp maple syrup
  • 0.3 oz ginger grated
  • 4 tbsp white or yellow miso paste or chickpea miso
  • 1 tbsp toasted sesame oil
  • 4 tbsp avocado oil or neutral flavored oil

Instructions

  1. Dice napa cabbage for salad: Slice Napa cabbage into thin strips, rinse, and drain well.
  2. Snow peas, radicchio, and scallions: Prepare snow peas, radicchio, and scallions by slicing and chopping them.
  3. Dressing: Mix soy sauce, rice vinegar, maple syrup, ginger, miso paste, sesame oil, and avocado oil to make the dressing.
  4. Serve: Combine cabbage, snow peas, radicchio, and scallions, drizzle with dressing, toss, and serve with almonds and wonton chips.

Notes

  • Ensure to remove excess moisture from the cabbage.
  • You can add more dressing according to taste.
  • Top with toasted almonds and wonton chips for extra crunch.
