Description

This Nigerian Chicken Stew recipe is a delicious and flavorful dish that combines tender chicken with a rich tomato-pepper sauce. Perfect for serving over rice or with a side of bread.

For the Chicken:

  • 2.5 lbs bone-in chicken (thighs or drumsticks), cleaned
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1 onion, chopped
  • 1/4 cup vegetable oil

For the Tomato-Pepper Sauce:

  • 4 large Roma tomatoes
  • 1 large red bell pepper
  • 1 small red onion
  • 2 scotch bonnet peppers (or 1 for less heat)
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 bouillon cube
  • Salt to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion. Let it marinate for at least 30 minutes.
  2. Prepare the Tomato-Pepper Sauce: Blend tomatoes, red bell pepper, red onion, scotch bonnet peppers, tomato paste, garlic powder, ginger powder, bouillon cube, and salt until smooth.
  3. Cook the Chicken: In a large pot, heat vegetable oil and brown the marinated chicken pieces. Add the blended sauce and simmer for 30-40 minutes until the chicken is cooked through.
  4. Adjust Seasoning: Taste and adjust salt and pepper as needed. Serve hot with rice or bread.

Notes

  • You can adjust the spice level by adding more or fewer scotch bonnet peppers.
  • This stew can be made ahead of time and reheated for even better flavor.
