Description

This Northern-Style Thai Coconut Soup is a comforting and flavorful dish that combines the richness of coconut milk with the warmth of Thai spices. Perfect for a cozy night in or to impress guests with its exotic flavors.

Main Soup:

  • 1 1/2 tbsp avocado oil (or vegetable oil)
  • 1 onion, roughly chopped
  • 4 garlic cloves, roughly chopped
  • 1-inch cube of ginger
  • 12 tbsp of Thai red curry paste
  • 2 tsp curry powder
  • 1/2 tsp turmeric powder
  • 1 Litre (4 cups) low-sodium vegetable broth
  • 1 cup coconut milk (full-fat from a can)
  • 23 tbsp soy sauce
  • 2 tbsp coconut sugar
  • juice of 1/2 lime
  • 7oz rice noodles (about 1/2 a pack)

Garnish:

  • cilantro to top

Instructions

  1. Sauté Aromatics: Heat oil in a large pot, add onion, garlic, and ginger. Cook until fragrant.
  2. Add Spices: Stir in red curry paste, curry powder, and turmeric. Cook for another minute.
  3. Add Liquids: Pour in vegetable broth, coconut milk, soy sauce, coconut sugar, and lime juice. Bring to a simmer.
  4. Cook Noodles: Add rice noodles and cook until tender.
  5. Serve: Ladle soup into bowls and top with cilantro before serving.

Notes

  • You can adjust the spice level by adding more or less red curry paste.
  • Feel free to add protein like tofu, chicken, or shrimp for a heartier meal.
