This One Pot Creamy Cajun Sausage Pasta is a flavorful and satisfying dish that can be ready in just 30 minutes. The combination of smoked sausage, Cajun seasoning, creamy sauce, and colorful veggies creates a delicious meal.

Main Ingredients:

  • 10 ounces smoked sausage (Andouille or kielbasa)
  • 4 ounces pasta (penne or rigatoni)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup diced mixed bell peppers
  • 1/2 cup diced onion
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup fresh spinach (optional)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook Sausage: In a large pot, cook the sliced sausage over medium heat until browned. Remove and set aside.
  2. Sauté Veggies: In the same pot, sauté bell peppers and onions until softened.
  3. Add Pasta & Liquid: Stir in pasta, Cajun seasoning, chicken broth, and heavy cream. Bring to a simmer.
  4. Cook Pasta: Cover and cook for about 15 minutes or until pasta is tender.
  5. Finish Dish: Stir in Parmesan cheese, garlic powder, cayenne pepper, spinach, salt, and pepper. Cook until spinach wilts.
  6. Serve: Garnish with chopped parsley and enjoy!

Notes

  • You can adjust the spice level by adding more or less cayenne pepper.
  • Feel free to add other veggies like mushrooms or zucchini.
