Main Ingredients:
- 10 ounces smoked sausage (Andouille or kielbasa)
- 4 ounces pasta (penne or rigatoni)
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup diced mixed bell peppers
- 1/2 cup diced onion
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup fresh spinach (optional)
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook Sausage: In a large pot, cook the sliced sausage over medium heat until browned. Remove and set aside.
- Sauté Veggies: In the same pot, sauté bell peppers and onions until softened.
- Add Pasta & Liquid: Stir in pasta, Cajun seasoning, chicken broth, and heavy cream. Bring to a simmer.
- Cook Pasta: Cover and cook for about 15 minutes or until pasta is tender.
- Finish Dish: Stir in Parmesan cheese, garlic powder, cayenne pepper, spinach, salt, and pepper. Cook until spinach wilts.
- Serve: Garnish with chopped parsley and enjoy!
Notes
- You can adjust the spice level by adding more or less cayenne pepper.
- Feel free to add other veggies like mushrooms or zucchini.
