Description

One Pot Lasagna Soup is a hearty and comforting dish that brings all the flavors of traditional lasagna in a convenient soup form. With layers of ground beef, lasagna noodles, and cheesy goodness, this soup is perfect for a cozy night in.

Main Ingredients:

  • 1 lb ground beef
  • 3 garlic cloves, minced
  • 1/2 yellow onion, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried basil
  • 1/2 tsp dried oregano
  • 1 tsp kosher salt + more to taste
  • fresh ground pepper, to taste
  • 14 oz can crushed tomatoes
  • 32 oz chicken broth + more if needed
  • 1 c water
  • 2 tsp tomato paste
  • 6 oz lasagna noodles, broken into small pieces
  • 1 c frozen spinach
  • 1/4 c cream

Toppings:

  • Ricotta cheese
  • 4 oz mozzarella cheese, sliced
  • Optional: parmesan cheese

Instructions

  1. Brown the beef: In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add aromatics: Add garlic, onion, garlic powder, onion powder, basil, oregano, salt, and pepper. Cook until onions are soft.
  3. Simmer: Stir in crushed tomatoes, chicken broth, water, and tomato paste. Bring to a simmer.
  4. Add noodles and spinach: Add broken lasagna noodles and frozen spinach. Cook until noodles are tender.
  5. Finish with cream: Stir in cream and adjust seasoning to taste.
  6. Serve: Ladle the soup into bowls and top with ricotta, mozzarella, and parmesan cheese.

Notes

  • You can customize this soup by adding your favorite lasagna ingredients like mushrooms or bell peppers.
  • If the soup thickens too much, simply add more chicken broth to reach your desired consistency.
