  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • 1 large yellow onion, sliced
  • 4 cloves garlic, smashed
  • 1 1/2 cups (362 g) beef broth, plus more as needed
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh thyme (optional)
  • Mashed potatoes
  • Mushroom shallot gravy

Instructions

  1. Prepare the Roast: Let the chuck roast sit at room temperature, pat dry, and season with salt and pepper.
  2. Sear the Roast: Brown the roast in a Dutch oven, then set aside.
  3. Cook Aromatics: Saute onions and garlic in the pot.
