Ingredients

Scale

Ingredients:

  • 1 loaf (400 grams) brioche bread, 1-2 days old, cut into small cubes
  • 3/4 cup toasted pecans, roughly chopped
  • 6 eggs
  • 1¾ cup milk, 2%
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 cup packed brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Maple Cinnamon Whipped Cream:

  • 1½ cups 33% whipping cream
  • 3 tbsp maple syrup
  • 1/3 cup confectioners’ sugar, start with 3 tbsp and if you want it sweeter add another 2 tbsp
  • 1 tsp cinnamon

Instructions

  1. Prepare the Bread Mixture: In a large bowl, combine brioche bread cubes and toasted pecans.
  2. Prepare the Custard: In a separate bowl, whisk together eggs, milk, maple syrup, vanilla extract, almond extract, brown sugar, cinnamon, nutmeg, and salt.
  3. Assemble the Casserole: Pour the custard mixture over the bread mixture, ensuring all the bread is soaked. Cover and refrigerate overnight.
  4. Bake: Preheat oven to 350°F, uncover the casserole, and bake for about 45-50 minutes until golden brown.
  5. Make the Maple Cinnamon Whipped Cream: In a chilled bowl, whip cream, maple syrup, confectioners’ sugar, and cinnamon until stiff peaks form.
  6. Serve: Slice the French toast casserole, top with Maple Cinnamon Whipped Cream, and enjoy!

Notes

  • You can customize this casserole by adding fresh berries or a drizzle of additional maple syrup before serving.
  • If you prefer a nut-free version, omit the toasted pecans or substitute with seeds or dried fruit.
