- 1 lb ribeye steak, shaved/sliced thinly
- 4 tablespoons unsalted butter, divided
- 1/2 cup chopped yellow onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon worcestershire
- 11 egg roll wrappers
- 7 ounces provolone cheese, sliced in half
- 1.5 quarts peanut oil (or vegetable/canola oil)
Chipotle Sauce:
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 4 chipotle peppers in adobo sauce
- 1 tablespoon lemon juice
- 3 garlic cloves
- 1/2 teaspoon kosher salt
Instructions
- Prep the chipotle sauce: Combine all ingredients in a food processor and blend until smooth. Refrigerate.
- Prep the steak: Pulse the steak in a food processor. Set aside.
- Making the egg roll filling: Cook onions, peppers, then brown the steak. Season and combine.
- Assemble the egg rolls: Fill wrappers with meat mixture and cheese, roll up tightly.
- Fry the egg rolls: Heat oil, fry egg rolls until golden brown and crispy.
- Serve: Serve with chipotle sauce for dipping.
